Recipe: Raw Choc-Avocado Mousse

PALEO-FRIENDLY. GLUTEN FREE. DAIRY FREE. SOY FREE. EGG FREE. REFINED SUGAR FREE. NUT FREE.

This chocolate mousse is made up of healthy and delicious whole food ingredients, so you could even eat it for breakfast… everyday! It makes for a yummy dessert after dinner and can also be used as icing on top of a cake or frosting for cupcakes. Whichever way you decide to indulge, you won’t be able to get enough!

Ingredients (serves 3-4)

4  medium sized very ripe bananas

1 medium sized avocado

4 tablespoons raw cacao or cocoa powder

3 tablespoons coconut oil or coconut cream

1 tablespoon raw honey (you can add more if you like it a little sweeter – taste after you process)

pinch salt

4 teaspoons cacao nibs (1 teaspoon per person)

4 tablespoons coconut flakes (1 tablespoon per person)

Method

Prep time: 5 minutes

Making time: 5 minutes

Place all ingredients except cacao nibs and coconut flakes into a food processor and process until very smooth. No need to worry about over-processing this one – process away!

Spoon the mixture into cups, mugs or glasses and put in fridge to set for at least an hour. When you are ready to eat, add coconut flakes and cacao nibs on top. Eat until you can see the bottom of the glass!
