Recipe: Perfect Paleo Lasagna

Let’s face it, who doesn’t love a home cooked lasagna from time to time?! I know I do, however I don’t do well with gluten/wheat, so thankfully this recipe saves the day in that respect. Plus, it’s packed with extra veggies instead of sheets of pasta, so there’s more nutrition in every bite! This is a nice one for the family or even when you have a few friends over. It is homely, cosy, delicious and satisfying. Ticks all the boxes!

Ingredients (serves 4)

500g pork and veal mince (or you could use beef mince)

1 cup onion, finely chopped

1 medium sized zucchini, sliced thinly

1 cup capsicum (any colour), chopped

3 small cloves garlic, finely chopped or minced

150g mushrooms, Portabello if possible, but if not, other white ones are ok

600ml tomato passata/puree

1 tablespoon coconut oil (or cooking fat of your choice, preferably not vegetable/seed oils)

1 teaspoon basil, dried or fresh

1 teaspoon oregano, dried or fresh

salt and pepper, to taste

Method 

Prep time: Approx. 10 minutes

Cooking time: Approx. 30-40 minutes

Preheat oven to 160 °C.

On the stovetop on medium heat, melt coconut oil in large pot.

Add in garlic and onion and sauté for 5 minutes.

Then add the meat, season with salt and pepper, and let it brown, stirring continuously.

Add chopped capsicum and stir through the tomato puree. Then add in basil and oregano. Keep stirring.

Bring the sauce to a light boil, then remove from heat.

Using the coconut oil, grease a 23cm x 32cm (or close enough) baking dish.

Place a thin layer (about 1.5cm) of the sauce in the baking dish.

Layer zucchini and mushrooms on top of the sauce, then repeat, alternating a layer of sauce, then a layer of zucchini and mushrooms.

Transfer dish to oven and bake lasagna at set temperature of 160°C for 15 minutes, covered with foil.

After 15 minutes, take off the foil and increase the temperature to 180°C. Continue baking for an additional 15 minutes.

*Note, cooking times may  vary slightly, depending on the oven.

Remove from oven carefully. Cut portions to desired size. Enjoy!
